When the autumn wind starts stroking the peaks and the leaves turn from gold to rusty red, you know the time has come: Brisolée. At WhiteFrontier, it’s more than a seasonal dish—it’s an invitation to slow down, savour, share, and blend local terroir with brewing boldness.

An age-old, heart-warming tradition
Brisolée has its roots in Valais villages, where the chestnut harvest marked the end of summer and the start of autumn. People celebrated nature’s generosity, the work of the land, and the warmth of home.

On the traditional menu:

  • Roasted chestnuts, just off the fire, to be eaten while still warm

  • Local cheeses—often hard cheeses—that pair perfectly with the smoky flavour of the chestnuts

  • A glass of local wine or juice to go with it all

The mood is rustic and friendly: people gather by the fireplace or in village squares, talking, laughing, and sharing memories of past seasons. Brisolée is a moment when time slows down and you fully enjoy autumn and its flavours.

Brisolée & beer: a surprising pairing
For those who love mixing tradition with modernity, WhiteFrontier’s Fully à la châtaigne joins the Brisolée table. Subtly perfumed with chestnut notes, this beer pairs beautifully with roasted chestnuts and Valais cheeses, creating a gentle, gourmet link between terroir and brewing. 🍺🌰

At WhiteFrontier, we’re celebrating this magical moment with a reimagined Brisolée—between Valais tradition and brewing creativity. A true tribute to conviviality, terroir… and beer. 🍺
